Brief Update: Good News!

Great news! Our construction permits are in! Our general contractor is on board! Our other contractors have been notified that work can now commence! Just hoping that everyone can schedule our project in. It’s up to us to get some of the equipment to be installed (all our sinks and fixtures). So I’m ordering stuff online (FREE rush shipping anyone?!). Then, even though it’s one of the last steps, I want to revisit what type of flooring to put down (bumpy carpet isn’t gettin’ it for me lol).

So I hope it all gets started on Monday. Until then… Keep hope alive!

We Have Been Approved!

The City of Tampa has approved our request to begin construction so that YOU can visit Enjoi Sweets & Company on Gandy Blvd. and enjoi delicious treats in a comfortable and inviting atmosphere in our cupcake and dessert shop.   We’ll keep you posted as we move through the process of adding an anticipated new business to the neighborhood.  Watch for our grand opening!

The good book tells us to exercise patience … this we did (but not without much anxiety and stress) and the pay-off has finally come.

Reflections from a mom …

I just want to take a moment to express my deep gratitude and share my pride in my daughter, Joi.  It takes a strong and highly motivated woman to decide to step out and start her own business.   It takes a smart woman to sidestep her professional background and do something in a totally different direction and be REALLY REALLY good at it!  It takes a daring woman to accept what her real passion is despite all the time and money spent on an education then turn away and follow her heart.  I am one proud mom and I couldn’t ask for a better business partner!  Joi and Enjoi Sweets Rocks!!

Ban Auf Fee! Ban Auf Fee!

I did not want to do it.  I did not want to taste another banana cupcake because I’m so committed to our Black Bottom Banana cupcake — and I never even liked bananas!!!!!  But I took the plunge still thinking that we had one too many banana choices, but I tasted it anyway.  And ohhhh, it was so goooood!  The buttercream is so light and fluffy, the caramel drizzle is perfect and rich topped with walnuts, but to taste the banana cake with little tiny bits of banana, that took me over the top.  I think I may have a new favorite!  Let’s see … my favorite is Coconut, the next is Chocolate Mint, and now my favorite favorite (yes favorite twice is not a mistake) is Banoffee Nut! (Although that can change at the drop of a hat ’cause they’re all soooooo goooood!)

Great job, Joi!  I surely enjoied those Banoffee Nut cupcakes and so glad you added them to the menu.

New Cupcake Flavor Added

If you saw our tweet the other day about testing more cupcake recipes you may already know what’s in store… Banoffee Nut Cupcakes!

We were inspired by banoffee pie which is one of those graham cracker or cookie crust refrigerator pies made with layers of soft toffee, bananas, and whipped cream.

Today is National Vanilla Cupcake Day

Yes, you’ve heard correctly. Today is National Vanilla Cupcake Day! Enjoi one or two or three… and maybe a chocolate one out of spite?

Memories of Ybor City Days

I will always remember with much fondness those sweet days at Ybor City Market where we used to sell our mini cupcakes.  Here’s a look at 3 of our best sellers — Chai Tea & Honey with Cinnamon  Buttercream; Vanilla cake with Vanilla  Buttercream; and one of my absolute favorite addictions, Chocolate Mint.  I’m getting a headache just thinking about it.  I think I better whip up a batch!

That’s It! “Hand Pies!”

You may or may not know, but Enjoi Sweets not only offers the most delicious cupcakes, but we also offer what we’ve been calling “individual” or “personal” pies.  We just read an article about another trend — “hand pies.”  So that’s it!  We’re going for the name change!  We will now call our personal pies “hand pies!”   When we open our doors you’ll be able to taste the warm, sweet, umm umm good flavors of our  sweet potato and apple pies.  More flavors will be coming, but you know how we are — they must pass the rigorous test of our R&D department (hubbies, family, and friends).  They must be perfect first!

Sad news:  the pies will not be offered until we open our doors.
